Ingredients:

  • 2 Bagels 
  • 4 rashers of Bacon 
  • 2 little Avocados, stripped and destoned 
  • 2 tsp Chili Jam 
  • 2 Eggs 
  • 1 square Halloumi, separated into 6 
  • 1 tsp Butter 
  • Lemon Juice, to taste 
  • Additional Virgin Olive Oil 
  • Salt and Black Pepper, to taste 
  • Chives, to decorate

Instructions:

  1. Start by daintily crushing your avocado with a press of lemon squeeze, a shower of additional virgin olive oil and salt and pepper to taste. Spot to the other side. 
  2. Cut your bagels down the middle so you have a 'top' and 'base' cut. Toast your base cut either under the flame broil or in the toaster. Cut a gap sufficiently enormous to fit an egg in the top half. Spot both to the other side. 
  3. Fry your bacon until wanted freshness, at that point fry your halloumi in the bacon fat until brilliant the two sides.
